Ingredients

Protein & Meat

  • 1 lb (450g) ribeye steak, thinly sliced
Ribeye is the traditional choice because it’s tender, juicy, and flavorful. You can freeze it slightly before slicing to make it easier to cut thin slices.

Cheese

  • Provolone cheese or Cheez Whiz
Provolone gives a smooth, slightly nutty flavor. Cheez Whiz is classic Philly style for some purists.

Bread

  • Soft hoagie rolls (Italian rolls)
Authenticity matters here—soft rolls with a chewy interior are ideal.

Vegetables (Optional)

  • Onions, thinly sliced
  • Bell peppers or mushrooms (optional, not traditional but commonly added)

Condiments

  • Minimal or none traditionally
  • Salt and pepper for seasoning

Step-by-Step Instructions

Step 1: Prep the Ingredients

  1. Slice the ribeye steak very thinly—partially freezing it helps.
  2. Slice the onions thinly, if using.
  3. Slice the hoagie rolls open, but do not cut all the way through; they should act as a cradle for the filling.

Step 2: Cook the Meat

  1. Heat a large skillet or griddle over medium-high heat.
  2. Add a small amount of oil (just enough to prevent sticking).
  3. Add the thin slices of ribeye steak in a single layer. Avoid overcrowding.
  4. Season lightly with salt and pepper.
  5. Cook for 2–3 minutes, stirring occasionally, until meat is just browned but still tender.

Tip: The key is thin slices cooked quickly—overcooked steak becomes tough.

Step 3: Cook the Onions

  1. In the same skillet, push the meat to the side.
  2. Add onions (and optional peppers/mushrooms).
  3. Sauté until soft and slightly caramelized, about 5–7 minutes.

Combining the onions with the steak at the end lets the flavors blend naturally.

Step 4: Add Cheese

  1. Place slices of provolone over the cooked steak and onions.
  2. Allow cheese to melt for 1–2 minutes.
    • If using Cheez Whiz, spoon it over the meat while still hot and stir gently to melt.

Step 5: Assemble the Sandwich

  1. Open the hoagie rolls and pile in the cheesy steak mixture.
  2. Serve immediately while hot.

Authentic Philly Cheesesteaks are served plain or with minimal toppings—lettuce, tomato, or ketchup are not traditional.

Tips for Authenticity

  • Use high-quality ribeye steak and slice thinly.
  • Use soft hoagie rolls, ideally fresh from a local bakery.
  • Don’t overcook the meat; it should remain tender.
  • Cheese is essential—Provolone or Cheez Whiz only.

Serving Suggestions

  • Serve with fries or chips on the side.
  • A simple pickle spear completes the Philly diner experience.
