Overview
Mediterranean Roll-Ups are a fresh, flavorful dish inspired by classic Mediterranean ingredients like hummus, roasted vegetables, olives, herbs, and cheese. They are versatile and can be served as a light lunch, appetizer, snack, or party platter item. These roll-ups are easy to assemble, visually appealing, and customizable for vegetarian, vegan, or protein-rich variations.
Ingredients
For the Base
- 4 large flour tortillas or lavash wraps
- 1 cup hummus (classic, roasted red pepper, or garlic)
For the Vegetables
- 1 medium zucchini, thinly sliced lengthwise
- 1 red bell pepper, sliced into strips
- 1 yellow bell pepper, sliced into strips
- 1 small red onion, thinly sliced
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
For the Fillings
- 1/2 cup crumbled feta cheese
- 1/3 cup sliced Kalamata olives
- 1/2 cup roasted red peppers, sliced
- 1/2 cup baby spinach or arugula
- 2 tablespoons fresh parsley or basil, finely chopped

Step 1: Roast the Vegetables
Preheat the oven to 425°F (220°C).
Place the zucchini, bell peppers, and red onion on a baking sheet. Drizzle with olive oil and season with salt and black pepper. Toss to coat evenly.
Spread the vegetables in a single layer and roast for 15 to 20 minutes, flipping halfway through, until tender and lightly caramelized.
Remove from the oven and allow the vegetables to cool slightly. Cooling prevents the wraps from becoming soggy.
Step 2: Prepare the Wraps
Lay the tortillas or lavash wraps flat on a clean work surface.
Spread a generous, even layer of hummus over each wrap, leaving about a 1-inch border around the edges. This helps keep the filling contained when rolling.
Step 3: Add the Fillings
Evenly distribute the roasted vegetables over the hummus.
Sprinkle feta cheese, olives, roasted red peppers, fresh greens, and chopped herbs over the vegetables.
If using optional add-ins such as chicken or sun-dried tomatoes, layer them evenly across the wraps.
Step 4: Roll the Wraps
Starting at one end, tightly roll each wrap into a log, keeping the filling snug but not overpacked.
Place the wraps seam-side down and allow them to rest for 5 minutes. This helps them hold their shape when sliced.
Step 5: Slice and Serve
Using a sharp knife, slice each roll-up into 1 to 1 1/2-inch pieces.
Arrange on a serving platter with the cut sides facing up for presentation.
Serve immediately or chill briefly before serving for cleaner slices.
