- 1 cup (225g) cottage cheese
(Full-fat gives the creamiest texture) - 2 tbsp unsweetened cocoa powder
- 2–3 tbsp honey or maple syrup (adjust to taste)
- 1 tsp vanilla extract
- Pinch of salt
- Optional:
- 1–2 tbsp melted dark chocolate (for extra richness)
- 1–2 tbsp milk or cream (to thin, if needed)

Step-by-Step Instructions
1. Blend the Cottage Cheese
Add the cottage cheese to a blender or food processor.
Blend for 30–60 seconds until completely smooth.
Important: This step is key. Blend until there are no visible curds. The texture should resemble thick yogurt or cream.
2. Add Chocolate and Flavorings
Add the cocoa powder, honey (or maple syrup), vanilla extract, and salt.
If using melted dark chocolate, add it now.
Blend again until fully combined and silky smooth.
3. Adjust Texture and Taste
- If the mousse is too thick, add 1 tablespoon of milk or cream and blend again.
- Taste and adjust sweetness or cocoa as needed.
Tip: Start with less sweetener—you can always add more.
4. Chill (Optional but Recommended)
Transfer the mousse to serving bowls.
Chill in the refrigerator for 20–30 minutes.
