Ingredients (8-inch cake or small loaf)
- 1 cup (240g) plain yogurt
- 1 cup (200g) granulated sugar
- 3 large eggs
- 1/2 cup (120ml) vegetable oil or melted butter
- 1 1/2 cups (180g) all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- Optional: zest of 1 lemon or orange for extra flavor

Equipment Needed
- Air fryer
- 7–8 inch round cake pan or small loaf pan that fits in your air fryer
- Mixing bowls
- Whisk or hand mixer

Instructions
1. Prepare the Pan
- Grease your cake pan lightly with butter or oil and line with parchment paper if desired.
- Preheat the air fryer to 320°F (160°C) for 3–5 minutes.
2. Mix Wet Ingredients
- In a large bowl, whisk together yogurt, sugar, eggs, oil, and vanilla extract until smooth and combined.
- If using citrus zest, add it now.
Tip: Make sure eggs are at room temperature for a lighter, fluffier texture.
3. Combine Dry Ingredients
- In a separate bowl, sift together flour, baking powder, and salt.
- Gradually fold the dry ingredients into the wet mixture using a spatula.
- Mix gently until smooth. Avoid overmixing; overmixing can make the cake dense.
4. Pour Batter into Pan
- Transfer the batter to your prepared pan and smooth the top with a spatula.
5. Air Fry the Cake
- Place the cake pan in the air fryer basket.
- Cook at 320°F (160°C) for 25–30 minutes.
- Check for doneness by inserting a toothpick into the center—it should come out clean.
Tip: Cooking times may vary depending on your air fryer model. Start checking at 20 minutes to avoid overcooking.
6. Cool and Serve
- Allow the cake to cool in the pan for 10 minutes.
- Remove and transfer to a wire rack to cool completely.
- Dust with powdered sugar or top with berries if desired.
