Basic Ingredients
500 to 700 grams potatoes
2 to 3 tablespoons oil (olive oil or any cooking oil)
1 teaspoon salt
Half teaspoon black pepper
Flavoring Ingredients
1 teaspoon garlic powder (or 2 to 3 cloves fresh garlic, minced)
Half teaspoon paprika
Half teaspoon dried oregano or thyme (optional)
Optional Add-ons (for extra taste)
Chili flakes (for a spicy kick)
Lemon juice (for a fresh tangy flavor)
Fresh herbs like coriander or parsley (for garnish)
You can adjust all seasonings according to your taste.
Step 1: Choose the right potatoes
Start by selecting about 500 grams to 700 grams of potatoes. Medium-starch varieties are ideal because they give a soft interior and crispy exterior. Try to choose potatoes that are firm, smooth, and free from green spots or sprouts. Fresh potatoes always give better flavor and texture.
Step 2: Wash the potatoes thoroughly
Place the potatoes under running water and scrub them gently with your hands or a soft brush to remove all dirt and debris. Since potatoes grow underground, they often carry soil, so proper cleaning is important. Do not skip this step, even if you plan to peel them.
Step 3: Decide whether to peel or not
Peeling is optional. If you leave the skin on, the potatoes will have a slightly rustic texture and more nutrients. If you peel them, the final result will be smoother and slightly softer. Choose based on your personal preference.
Step 4: Dry the potatoes completely
After washing (and peeling if you chose to), dry the potatoes using a clean kitchen towel or paper towels. This step is very important because excess moisture prevents crisping. The drier the potatoes, the better the final texture.
Step 5: Cut into evenly sized pieces
Use a sharp knife to cut the potatoes into cubes, wedges, or thick slices. Aim for pieces about 2 to 3 centimeters in size. Uniform size ensures even cooking. If pieces are uneven, some may burn while others remain undercooked.
Step 6: Optional soaking for extra crispiness
Place the cut potatoes into a bowl of cold water and let them soak for 20 to 30 minutes. This removes excess surface starch, which helps create a crispier exterior. After soaking, drain the water and dry the potatoes very thoroughly again. Any remaining water will interfere with roasting.
Step 7: Prepare the seasoning mix
In a small bowl, combine your seasonings. A basic mix includes 1 teaspoon salt, half a teaspoon black pepper, 1 teaspoon garlic powder, and half a teaspoon paprika. You can also add dried herbs like oregano, thyme, or rosemary. Adjust the spices based on your taste preference.
Step 8: Coat the potatoes with oil
Transfer the dried potato pieces into a large mixing bowl. Add 2 to 3 tablespoons of oil. Use your hands or a spoon to toss the potatoes until each piece is lightly and evenly coated. Oil is essential for crisping and helps the seasoning stick to the surface.
Step 9: Add seasoning to the potatoes
Sprinkle the prepared seasoning mix over the oiled potatoes. Toss everything well so that all pieces are evenly coated with spices. Make sure no seasoning is clumped in one place.
Step 10: Preheat the air fryer
Turn on your air fryer and set it to 180°C. Allow it to preheat for about 3 to 5 minutes. Preheating ensures that the potatoes start cooking immediately when placed inside, which improves texture and reduces cooking time.
Step 11: Arrange potatoes in the basket
Place the seasoned potatoes into the air fryer basket. Spread them out in a single layer as much as possible. Avoid overcrowding because proper air circulation is necessary for even cooking and crispiness. If you have a large batch, cook in multiple rounds.
Step 12: Start the first cooking phase
Insert the basket into the air fryer and cook the potatoes at 180°C for 10 minutes. This stage allows the inside of the potatoes to cook and soften gradually.
Step 13: Shake or turn the potatoes
After 10 minutes, carefully pull out the basket and shake it gently or use tongs to flip the potatoes. This step ensures that all sides are exposed to hot air and cook evenly.
Step 14: Increase temperature for crisping
Return the basket to the air fryer and increase the temperature to 200°C. Cook for another 10 to 15 minutes. This higher temperature helps develop a golden brown and crispy outer layer.
Step 15: Shake again during cooking
About halfway through the second cooking phase, shake the basket again. This prevents sticking and promotes even browning on all sides.
Step 16: Check for doneness
Toward the end of cooking, check the potatoes by inserting a fork or knife into one piece. It should go in easily, indicating a soft interior. The outside should look golden and slightly crisp.
Step 17: Adjust cooking time if needed
If the potatoes are not crispy enough, cook them for an additional 3 to 5 minutes at 200°C. Keep an eye on them to avoid burning.
Step 18: Remove and rest briefly
Once done, carefully remove the potatoes from the air fryer and place them in a serving bowl. Let them rest for 1 to 2 minutes. This allows the outer layer to firm up slightly.
Step 19: Final seasoning adjustment
Taste the potatoes and add a little more salt or seasoning if needed. You can also sprinkle fresh herbs or a pinch of chili flakes for extra flavor.
Step 20: Serve immediately
Serve the roasted potatoes while they are hot and crispy. They pair well with sauces like ketchup, garlic sauce, or yogurt-based dips, and can be enjoyed as a snack or side dish.
Extra Tips for Best Results
Always dry the potatoes thoroughly before cooking. Do not overcrowd the basket. Shake the potatoes during cooking for even crispiness. Adjust seasoning and cooking time based on your air fryer model, as different models may vary slightly.
