Ingredients
For the Cake:
- 3 large eggs
- 1 cup (200 g) granulated sugar
- 1/2 cup (120 ml) vegetable oil
- 1 cup (240 ml) plain yogurt
- 1 cup (160 g) fine semolina
- 1 cup (120 g) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- Zest of 1 lemon (optional, for extra aroma)
For the Syrup:
- 1 cup (200 g) granulated sugar
- 1 cup (240 ml) water
- 1 teaspoon lemon juice
Instructions
Step 1: Prepare the Syrup
- In a small saucepan, combine sugar and water.
- Bring to a boil over medium heat, stirring occasionally until the sugar dissolves.
- Add lemon juice and let it simmer for 5–7 minutes until slightly thickened.
- Remove from heat and let it cool completely. (Important: The syrup should be cool when poured over the hot cake.)
Step 2: Prepare the Cake Batter
- In a large mixing bowl, whisk the eggs and sugar together until light and fluffy (about 3–5 minutes).
- Add vegetable oil, yogurt, and vanilla extract. Mix well until smooth.
- In a separate bowl, combine semolina, flour, baking powder, and lemon zest.
- Gradually fold the dry ingredients into the wet mixture using a spatula. Mix gently until just combined.
- Tip: Avoid overmixing to keep the cake soft and airy.
Step 3: Prepare the Air Fryer
- Preheat the air fryer to 160°C (320°F) for 5 minutes.
- Grease a 6–7 inch (15–18 cm) round baking pan that fits in your air fryer basket.
- Pour the batter into the pan and smooth the top with a spatula.
Step 4: Bake the Cake
- Place the pan in the air fryer basket.
- Cook at 160°C (320°F) for 25–30 minutes.
- Check doneness by inserting a toothpick in the center; it should come out clean.
- Remove the cake carefully and let it sit for 5 minutes.
Step 5: Add the Syrup
- While the cake is still warm, pour the cooled syrup evenly over the top.
- Allow the cake to absorb the syrup for at least 1 hour at room temperature.
- Tip: The longer it sits, the more moist and flavorful it becomes.
Step 6: Serve
- Cut the Revani into squares or diamonds.
- Optionally, garnish with ground pistachios or desiccated coconut.
- Serve with a cup of tea or Turkish coffee.
