Air Fryer Revani

Ingredients

For the Cake:

  • 3 large eggs
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (120 ml) vegetable oil
  • 1 cup (240 ml) plain yogurt
  • 1 cup (160 g) fine semolina
  • 1 cup (120 g) all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon (optional, for extra aroma)

For the Syrup:

  • 1 cup (200 g) granulated sugar
  • 1 cup (240 ml) water
  • 1 teaspoon lemon juice

Instructions

Step 1: Prepare the Syrup

  1. In a small saucepan, combine sugar and water.
  2. Bring to a boil over medium heat, stirring occasionally until the sugar dissolves.
  3. Add lemon juice and let it simmer for 5–7 minutes until slightly thickened.
  4. Remove from heat and let it cool completely. (Important: The syrup should be cool when poured over the hot cake.)

Step 2: Prepare the Cake Batter

  1. In a large mixing bowl, whisk the eggs and sugar together until light and fluffy (about 3–5 minutes).
  2. Add vegetable oil, yogurt, and vanilla extract. Mix well until smooth.
  3. In a separate bowl, combine semolina, flour, baking powder, and lemon zest.
  4. Gradually fold the dry ingredients into the wet mixture using a spatula. Mix gently until just combined.
    • Tip: Avoid overmixing to keep the cake soft and airy.

Step 3: Prepare the Air Fryer

  1. Preheat the air fryer to 160°C (320°F) for 5 minutes.
  2. Grease a 6–7 inch (15–18 cm) round baking pan that fits in your air fryer basket.
  3. Pour the batter into the pan and smooth the top with a spatula.

Step 4: Bake the Cake

  1. Place the pan in the air fryer basket.
  2. Cook at 160°C (320°F) for 25–30 minutes.
  3. Check doneness by inserting a toothpick in the center; it should come out clean.
  4. Remove the cake carefully and let it sit for 5 minutes.

Step 5: Add the Syrup

  1. While the cake is still warm, pour the cooled syrup evenly over the top.
  2. Allow the cake to absorb the syrup for at least 1 hour at room temperature.
    • Tip: The longer it sits, the more moist and flavorful it becomes.

Step 6: Serve

  1. Cut the Revani into squares or diamonds.
  2. Optionally, garnish with ground pistachios or desiccated coconut.
  3. Serve with a cup of tea or Turkish coffee.
