Step-by-Step Instructions
Step 1: Prepare the Filling
- In a medium bowl, combine the cooked meat, beans, corn, cheese, and spices (cumin, chili powder, garlic powder, salt, and pepper).
- Mix until evenly combined.
Tip: The filling should be flavorful but not too wet—too much liquid makes tortillas soggy.
Step 2: Assemble the Chimichangas
- Lay a tortilla flat on a clean surface.
- Spoon ¼ of the filling slightly off-center on the tortilla.
- Fold the sides inward, then roll the tortilla tightly from the bottom to the top, sealing the filling inside.
- Repeat with remaining tortillas and filling.
Tip: Tuck the edges tightly to prevent filling from spilling during cooking.
Step 3: Prepare for the Air Fryer
- Lightly brush or spray each chimichanga with olive oil on all sides.
- Preheat the air fryer to 400°F (200°C) for 3–5 minutes.
Brushing or spraying oil ensures golden, crispy exteriors without deep frying.
Step 4: Cook the Chimichangas
- Place chimichangas in the air fryer basket in a single layer, leaving space between each one.
- Cook at 400°F (200°C) for 8–10 minutes, flipping halfway through for even browning.
- Chimichangas should be golden brown and crispy on all sides.
Tip: Cook in batches if necessary—overcrowding prevents crisping.
Step 5: Serve
- Remove from the air fryer and let them cool for 1–2 minutes.
- Slice in half or serve whole.
- Top with sour cream, salsa, guacamole, shredded lettuce, or your favorite toppings.
Optional: Sprinkle extra cheese or a dash of hot sauce for added flavor.
