Ingredients (Serves 2–3)
- 2–3 chicken breasts or thighs
- 1–2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ cup fresh mozzarella, sliced or shredded
- 1–2 ripe tomatoes, sliced
- Fresh basil leaves
- 1–2 teaspoons balsamic glaze (optional)
Equipment
- Air fryer
- Tongs or spatula
- Knife and cutting board
- Small bowl
Step 1: Prepare the Chicken
Pat chicken dry.
Season both sides with:
- Salt
- Pepper
- Garlic powder
- Italian seasoning
Drizzle with olive oil and rub gently.
Step 2: Air Fry the Chicken
Preheat the air fryer to 375°F (190°C) for 3–5 minutes.
Place chicken in a single layer in the basket.
Cook for 10–12 minutes, then flip.
Cook another 6–8 minutes, until the internal temperature reaches 165°F (74°C).
Step 3: Add Mozzarella
Top each piece of chicken with mozzarella slices.
Return to the air fryer for 2–3 minutes, until cheese melts and becomes soft and gooey.
Step 4: Add Fresh Toppings
Remove chicken from the air fryer.
Top with:
- Tomato slices
- Fresh basil leaves
- Drizzle of balsamic glaze if desired
Step 5: Serve
Serve immediately with:
- Steamed vegetables
- Rice, quinoa, or pasta
- Fresh salad
