  • 500 g (1 lb) boneless, skinless chicken breast or thighs
  • Salt and black pepper, to taste

Lemon Garlic Marinade

  • 3 tablespoons olive oil or butter
  • 4–5 cloves garlic, finely minced
  • Zest of 1 lemon
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano or thyme
  • ½ teaspoon chili flakes (optional)

Optional Finish

  • 1 tablespoon butter
  • 1 tablespoon chopped fresh parsley

EQUIPMENT

  • Cutting board and knife
  • Mixing bowl
  • Skillet, oven tray, or air fryer basket
  • Tongs or spatula

STAGE 1: PREPARING THE CHICKEN

  1. Cut chicken into evenly sized bite-size pieces, about 2–3 cm.
  2. Pat dry with paper towels.
  3. Season lightly with salt and black pepper.

Dry chicken browns better and absorbs flavor more effectively.

STAGE 2: MAKING THE LEMON GARLIC MARINADE

  1. In a bowl, combine olive oil, minced garlic, lemon zest, lemon juice, paprika, oregano, and chili flakes.
  2. Mix well until fully blended.

The zest provides strong citrus aroma while juice adds brightness.

STAGE 3: MARINATING

  1. Add chicken pieces to the marinade.
  2. Toss until every piece is evenly coated.
  3. Marinate for:
    • 15–20 minutes for quick cooking
    • Up to 2 hours for deeper flavor

Do not marinate too long, as lemon juice can toughen chicken.

Thighs are juicier; breasts are leaner.
  2. High Heat
Ensures golden edges and prevents drying.
  3. Fresh Garlic
    Provides stronger flavor than powder.
  4. Balance Lemon
Always use zest plus juice for full citrus flavor.
