Gluten-Free Gourmet Beef Sliders with Caramelised Onions

Ingredients

For the Caramelised Onions

  • 3 large yellow onions
  • 2 tablespoons olive oil
  • 1 tablespoon butter (or dairy-free butter)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon brown sugar (optional, for deeper sweetness)
  • 2 tablespoons water (as needed during cooking)

For the Beef Slider Patties

  • 600 g ground beef (80/20 fat ratio recommended)
  • 1 teaspoon fine salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon gluten-free Worcestershire sauce
  • 1 teaspoon Dijon mustard (check gluten-free label)
  • 1 small garlic clove, finely grated
  • 1 tablespoon finely minced shallot or onion
  • 1 tablespoon olive oil (for cooking)

Optional Cheese (All Gluten-Free)

  • Sharp cheddar
  • Gruyère
  • Swiss
  • Smoked gouda

Use thin slices, cut to slider size.


For the Gluten-Free Slider Buns

Choose certified gluten-free slider buns.
Soft varieties work best, such as:

  • Potato-based gluten-free buns
  • Milk-enriched gluten-free buns

You will need:

  • 8 slider buns
  • 2 tablespoons butter or olive oil for toasting

Optional Gourmet Condiments

  • Dijon mustard
  • Garlic mayonnaise
  • Gluten-free barbecue sauce

Part 1: Preparing the Caramelised Onions

Step 1: Slicing the Onions

  1. Peel the onions and cut them in half from root to tip.

  3. Keep slices relatively even to ensure uniform cooking.

Thin slices are essential for even caramelisation.


Step 2: Starting the Cook

  1. Heat olive oil and butter together in a large skillet over medium-low heat.
  2. Once melted and shimmering, add all onions.
  3. Sprinkle with salt and black pepper.
  4. Stir thoroughly to coat onions in fat.

The salt draws out moisture and helps the onions soften.


Step 3: Slow Caramelisation

  1. Reduce heat to low.
  2. Cook onions uncovered for 35–45 minutes, stirring every 5 minutes.
  3. If onions begin sticking, add 1 tablespoon water and scrape the pan.
  4. Continue until onions are deep golden brown, soft, and jam-like.

Do not rush this step. True caramelisation cannot be forced.


Step 4: Finishing the Onions

  1. Add balsamic vinegar and brown sugar (if using).
  2. Stir and cook for another 2–3 minutes.
  3. Remove from heat and set aside.

The onions should taste sweet, rich, and complex, not sharp.


Part 2: Preparing the Beef Patties

Step 1: Mixing the Beef

  1. Place ground beef in a mixing bowl.
  2. Add salt, pepper, Worcestershire sauce, mustard, garlic, and shallot.
  3. Mix gently using your fingertips until just combined.

Overmixing will result in dense patties.


Step 2: Shaping the Sliders

  1. Divide the mixture into 8 equal portions.
  2. Gently roll each portion into a ball.
  3. Flatten into patties about 1 cm thick.
  4. Make a slight indentation in the center of each patty.

The indentation prevents puffing during cooking.


Step 3: Resting

Place patties on a plate and refrigerate for 10–15 minutes.
This helps them hold their shape during cooking.


Part 3: Cooking the Beef Patties

Step 1: Heating the Pan

  1. Heat a skillet over medium-high heat.
  2. Add olive oil and swirl to coat.

The pan should be hot but not smoking excessively.


Step 2: Cooking

  1. Place patties in the pan without crowding.
  2. Cook for 2–3 minutes per side for medium doneness.
  3. Flip only once.

Avoid pressing down on the patties; this releases juices.


Step 3: Adding Cheese (Optional)

  1. Place cheese on patties during the final minute.
  2. Cover pan loosely with foil to help melt.

Remove patties from heat and rest for 2 minutes.


Part 4: Toasting the Gluten-Free Buns

Gluten-free buns benefit greatly from toasting.

  1. Slice buns horizontally.
  2. Brush cut sides lightly with butter or olive oil.
  3. Toast in a skillet or oven until lightly golden.

This improves texture and prevents sogginess.

Assembly order matters.

  1. Bottom bun
  2. Beef patty with melted cheese
  3. Generous spoonful of caramelised onions
  4. Optional sauce
  5. Top bun

Press gently, not firmly.
