Lentil Sloppy Joes are a hearty, plant-based twist on the classic comfort food. Using lentils as the base, this dish is rich in protein and fiber while being naturally vegan and satisfying. A savory, slightly sweet tomato-based sauce coats the lentils, delivering that familiar “sloppy” flavor, and it’s perfect for sandwich buns, sliders, or even over rice for a gluten-free option.


Ingredients

For the Lentil Filling

  • 1 cup dried brown or green lentils, rinsed and drained
  • 2 1/2 cups water or low-sodium vegetable broth
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced
  • 1 medium carrot, finely diced
  • 1 celery stalk, finely diced
  • 3 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt, plus more to taste
  • 1 teaspoon soy sauce or tamari (optional, for depth)

For the Sauce

  • 1/2 cup tomato sauce
  • 1/4 cup tomato paste
  • 2 tablespoons ketchup
  • 1 tablespoon maple syrup or brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon chili flakes or cayenne (optional, for heat)

For Serving

  • 4 to 6 hamburger buns, sandwich rolls, or slider buns
  • Optional toppings: pickles, shredded lettuce, sliced avocado, vegan cheese

Step 1: Cook the Lentils

Place the rinsed lentils in a medium saucepan with 2 1/2 cups water or broth. Bring to a boil, then reduce heat to a simmer.

Cook uncovered for 20 to 25 minutes until lentils are tender but not mushy. Drain any excess liquid and set aside.


Step 2: Prepare the Vegetables

While the lentils cook, heat olive oil in a large skillet over medium heat.

Add the diced onion, carrot, and celery. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables are softened and fragrant.

Add the garlic, smoked paprika, cumin, chili powder, salt, and black pepper. Cook for another 30 to 60 seconds until aromatic.


Step 3: Make the Sloppy Joe Sauce

In a small bowl, whisk together tomato sauce, tomato paste, ketchup, maple syrup or brown sugar, apple cider vinegar, Dijon mustard, smoked paprika, and chili flakes if using.

Pour the sauce over the cooked vegetables in the skillet. Stir to combine and let simmer for 2 to 3 minutes to marry the flavors.


Step 4: Combine Lentils and Sauce

Add the cooked lentils to the skillet with the sauce and vegetables.

Stir thoroughly to coat all the lentils in the sauce. Reduce heat to low and let simmer for 5 minutes, stirring occasionally. Taste and adjust seasoning with salt, pepper, or a splash of vinegar if desired.

The mixture should be thick and slightly sticky—not watery.


Step 5: Prepare the Buns

Toast the hamburger or slider buns lightly in a skillet or oven for extra flavor and texture.


Step 6: Assemble the Sloppy Joes

Spoon a generous portion of the lentil mixture onto the bottom half of each bun.

Add optional toppings such as pickles, lettuce, avocado, or vegan cheese.

Top with the other half of the bun and serve immediately.


Storage and Make-Ahead Tips

  • Store leftover lentil mixture in an airtight container in the refrigerator for up to 4 days.
  • Reheat gently in a skillet or microwave, adding a splash of water if needed to loosen the sauce.
  • Assemble sandwiches just before serving to maintain the buns’ texture.
