Air Fryer Chimichangas

Ingredients

For the Filling

  • 1 cup cooked chicken, beef, or shredded pork
    You can use rotisserie chicken for convenience.
  • ½ cup black beans (cooked or canned, drained and rinsed)
  • ½ cup corn (optional, adds sweetness and texture)
  • ½ cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
  • Optional: chopped onions, bell peppers, or jalapeños for extra flavor

For the Chimichangas

  • 4 large flour tortillas
  • 1–2 tablespoons olive oil or cooking spray
    Used to lightly coat the outside for crispiness in the air fryer.

Optional Toppings

  • Sour cream
  • Salsa or pico de gallo
  • Guacamole
  • Shredded lettuce
  • Sliced olives

Step-by-Step Instructions

Step 1: Prepare the Filling

  1. In a medium bowl, combine the cooked meat, beans, corn, cheese, and spices (cumin, chili powder, garlic powder, salt, and pepper).
  2. Mix until evenly combined.

Tip: The filling should be flavorful but not too wet—too much liquid makes tortillas soggy.


Step 2: Assemble the Chimichangas

  1. Lay a tortilla flat on a clean surface.
  2. Spoon ¼ of the filling slightly off-center on the tortilla.
  3. Fold the sides inward, then roll the tortilla tightly from the bottom to the top, sealing the filling inside.
  4. Repeat with remaining tortillas and filling.

Tip: Tuck the edges tightly to prevent filling from spilling during cooking.


Step 3: Prepare for the Air Fryer

  1. Lightly brush or spray each chimichanga with olive oil on all sides.
  2. Preheat the air fryer to 400°F (200°C) for 3–5 minutes.

Brushing or spraying oil ensures golden, crispy exteriors without deep frying.


Step 4: Cook the Chimichangas

  1. Place chimichangas in the air fryer basket in a single layer, leaving space between each one.
  2. Cook at 400°F (200°C) for 8–10 minutes, flipping halfway through for even browning.
  3. Chimichangas should be golden brown and crispy on all sides.

Tip: Cook in batches if necessary—overcrowding prevents crisping.


Step 5: Serve

  1. Remove from the air fryer and let them cool for 1–2 minutes.
  2. Slice in half or serve whole.
  3. Top with sour cream, salsa, guacamole, shredded lettuce, or your favorite toppings.

Optional: Sprinkle extra cheese or a dash of hot sauce for added flavor.
