Potato slices are thinly cut potatoes that are seasoned and cooked until crispy on the outside and soft on the inside. They can be shallow-fried, deep-fried, baked, air-fried, or pan-fried. This recipe focuses on crispy spiced potato slices that work as a snack or side dish.
INGREDIENTS (BASIC VERSION)
Main Ingredients
4 to 5 medium potatoes (any variety, starchy potatoes work best)
Water (for soaking and boiling)
Oil (for frying or brushing)
Spices and Seasonings
1 teaspoon salt (adjust to taste)
Half teaspoon red chili powder
Half teaspoon black pepper
Half teaspoon paprika (optional, for color)
Half teaspoon garlic powder or 2 fresh garlic cloves (crushed)
Half teaspoon onion powder (optional)
Half teaspoon dried oregano or mixed herbs
Half teaspoon chili flakes (optional)
1 tablespoon cornflour or rice flour (for extra crispiness)
STEP 1: CHOOSING AND PREPARING POTATOES
Choose firm potatoes without green spots or sprouts.
Wash them thoroughly under running water.
Peel the skin if you prefer; keeping the skin adds texture and flavor.
Slice the potatoes into thin, even slices about 2 to 3 millimeters thick.
Slices that are too thick will not become crispy, while slices that are too thin may burn easily.
Using a slicer or mandoline helps achieve uniform thickness.
STEP 2: SOAKING THE POTATO SLICES
Place the sliced potatoes into a large bowl.
Add enough cold water to fully cover the slices.
Soak for 20 to 30 minutes.
Soaking removes excess starch, helps the potatoes become crispier, and prevents slices from sticking together.
After soaking, drain the water, rinse once more, and pat the slices completely dry using a clean kitchen towel. Moisture on the surface will cause soggy results.
STEP 3: OPTIONAL PARBOILING FOR A SOFT INTERIOR
This step is optional but recommended for better texture.
Bring a pot of water to a boil and add a little salt.
Add the potato slices and boil for only 2 to 3 minutes.
Do not fully cook them.
Drain immediately and spread the slices on a plate or tray.
Allow them to cool and dry completely.
This step helps create a soft interior while keeping the outside crispy during frying.
STEP 4: SEASONING THE POTATO SLICES
Place the dried potato slices into a large mixing bowl.
Add salt, chili powder, black pepper, paprika, garlic powder, onion powder, herbs, chili flakes, and cornflour.
Mix gently so every slice is evenly coated with seasoning.
Do not add water at this stage.
AIR FRYER POTATO SLICES
Preheat the air fryer to 180 degrees Celsius.
Toss the potato slices with 1 to 2 tablespoons of oil.
Place them in the air fryer basket without overcrowding.
Cook for 15 to 18 minutes, shaking the basket halfway through.
